A few years back I discovered the beauty of what is the Mongolian-style Grill. These all-you-can-eat made-to-order restaurants offer great variety and quick turn around times, appeasing any appetite!
But when it’s a weeknight and you’re getting home from work on the later side, a trip to Hu Hot might not be in the cards. Fear not, with a little forethought on your grocery shopping run, you can be ready to whip up a batch of delicious Orange Chicken Angel Hair Stir Fry.
This recipe makes use of an Instant Pot to cook the chicken. If you don’t have an electric pressure cooker in your life, consider this recipe your permission to acquire one!
What You’ll Need
6 small/medium boneless, skinless chicken breasts (frozen was used for this recipe)
1 lb. Angel Hair Pasta, cooked Al Dente and set aside
2 cups rice (prepared and served on the side)
1 bag of frozen Stir Fry Veggies (we like water chestnut and snap pea varieties!)
Instant Pot Prep & Seasonings for Chicken
1 cup of Chicken Broth
¼ cup of Orange Juice
Salt Garlic Powder
4 tbsp Butter
1 tbsp Olive Oil
1 Large Orange
½ cup Orange Juice
¼ cup Soy Sauce
¼ Cup Teryaki Sauce
1 tbsp Hoisin Sauce
1 tbsp Coarse Ground Mustard
1 tbsp Minced Garlic
1 tsp Smoked Chipotle Pepper (or your favorite hot pepper)
Instant Pot Method
The Instant Pot requires a base liquid to work with to generate steam, which in turn creates the pressure necessary for pressure cooking. For cooking chicken breasts, the simplest and most flavorful option is to put 1 cup of chicken broth in the pan before cooking. I like to add additional seasonings to the broth based on my end goal.
For this stir fry, I add a splash of orange juice with the chicken broth. That orange flavor will start to cook into the chicken in the instant pot.
Place the frozen chicken breasts on the wire rack within the pot. Typically 3 breasts will fit on a layer, so you’ll have 2 layers. Try to stagger the meat so that they are evenly distributed. This will help ensure that they cook evenly.
Add the seasonings to each layer of chicken. These flavors will help the meat to take on the flavor profile as they are pressure cooked. We’ll be finishing the chicken in the sauce, so we don’t need to go crazy here. Just apply a light even coat of salt, black pepper, garlic powder and smoked paprika.
Instant Pot Settings
- Pressure Cook – “High”
- 12 Minutes
- Quick Release
It will take a few minutes for the instant pot to get up to heat. This is a good time to get the rice, noodles and vegetables prepared. Follow directions on the packaging of these items to cook as directed. The rice will be kept on the side, and the noodles and vegetables will eventually make it into our wok!
Preheat a medium saucepan on medium heat. Melt the butter and add Olive Oil.
Cut the Large Orange in half and score the insides of each half. Squeeze each half into the pan. Allow some pieces of the inside of the orange to fall into the pan, it’s delicious! Add the additional ½ cup of Orange Juice to the pan.
Whisk together the sauce ingredients as you add the remaining items. These quantities fit a flavor profile that works well for our family. If you have experience with these spices and sauces, by all means add to your own tastes!
If you like a little more heat, be liberal with the hot stuff. I’ve added tabasco sauce or increased the amount of Chipotle powder with success (and clearer sinuses!).
Keep stirring the sauce as it bubbles for up to 1 minute. Remove the saucepan from the heat and replace it with the big wok. Preheat the wok over medium heat and add a tbsp of olive oil to help season the pan.
As soon as the timer beeps on the Instant pot, you can do a quick release. Always use caution when releasing pressure from a pressure cooker. Never open the lid until you are confident that the pressure indicator valve is released.
Remove the cooked chicken from the instant pot and cut it up into ¾” pieces. Throw the pieces in the sauce pan as you cut them up so they can begin to take on the flavors of the sauce.
With the chicken cut up and sauced, pour the sauce pan into your pre-heated wok. Add in your cooked noodles and cooked vegetables and stir fry until all of the ingredients are adequately sauced!
Serve in bowls with cooked rice, along with your chilled beverage of choice!
